If you were to peek through the gates of the estate on a quiet Thursday morning, you would find a very different kind of energy than the lively hum of our weekend afternoons.
Thursday is the day the estate catches its breath and begins to build.
There is a beautiful, rhythmic soundtrack to prep day. It’s the steady snip-snip of shears in the herb garden, the heavy thud of seasoned oak logs being stacked by the wood-fired oven, and the fragrant, sweet steam rising from the kitchen as the team reduces fresh peaches for the bar.
Most people only see the final, polished picture: a clean table under the oaks and a perfectly chilled glass. But today, we wanted to take you behind the scenes to show you the hands, the dirt, and the kitchen trials that shaped what you’ll be tasting this weekend.
The Garden-to-Glass Experiment
For the past few weeks, our bar team has had sticky hands and stained fingertips. We wanted to create a summer drink menu that didn't just look pretty, but actually tasted like a walk through our estate gardens.
That meant bypassing commercial syrups and heading straight into the soil with our shears.

THE CREATIVE PROCESS: BEHIND THE BAR

Step 1: The Morning Harvest
Every morning, we harvest fresh, low-growing purple thyme and lush basil directly from the garden beds just past the patio.
Step 2: Releasing the Aromatics
To get that incredible "summer-in-a-glass" flavor, we gently bruise the fresh herbs to release their essential oils before shaking them.
Step 3: Finding the Wine Balance
We paired the earthy, herbaceous notes of our freshly clipped thyme with the soft, stone-fruit profile of our Chardonnay and sweet peach juice.
The result of all that trial-and-error? Our brand-new Summer Thyme spritz and a beautifully zesty Grapefruit Rosé cocktail. And because we know the valley sun can be relentless in July, we finally brought a long-time dream to life this week: handcrafted wine slushies.

They are icy, refreshing, and made with the same premium estate wines you love, just dialed down to sub-zero temperatures for the perfect patio escape.
In the Kitchen with Chef Bernard
Meanwhile, the kitchen is currently registering a cozy 500 degrees as Chef Bernard stokes the wood-fired oven. Summer is his absolute favorite season to cook, purely because he doesn't have to overcomplicate the plate. When ingredients are at their absolute peak, the best thing a chef can do is get out of the way.

Right now, the prep tables are piled high with sweet, heavy heirloom tomatoes in vibrant reds, yellows, and deep purples, alongside rustic wooden cutting boards covered in freshly chopped garden veggies and fragrant herbs.
This weekend, Bernard is letting the fire do the talking. He’s taking those sun-ripened heirlooms, tossing them with a drizzle of robust olive oil and garden basil, and serving them over warm, blistered baguette slices for our Heirloom Tomato Bruschetta.
If you're looking for something a bit more indulgent, watch for his Roasted Corn & Bacon Flatbread to slide out of the oven—it's finished with a handful of fresh, peppery arugula and micro-basil clipped just hours prior.
Tending the Soil: Our New Weekly Rhythm
You might notice a subtle change on our gates and website this week. To make sure we can keep pouring this level of love into our gardens, our kitchen, and our wines, we have transitioned into a new weekly rhythm.

Mondays are now reserved entirely for the care of the estate. It’s the day we prune the vines, tend to the heavy-feeding summer gardens, deep-clean the kitchen, and give our team a moment to rest and dream up what’s next. Wednesdays will now be dedicated strictly to private events and intimate classes.
Our public tasting room hours remain a joyful Thursday through Sunday. We’ve realized that by giving the estate a few quiet days to breathe, the weekends feel more vibrant, soulful, and welcoming than ever before.
The Weekend Soundtrack
When you do make it out to your shaded table this weekend, we have a stellar lineup of local musicians ready to help you slow down and savor the breeze:
Friday (5 PM - 8 PM): Lean into the twilight with the groove-heavy, soulful sounds of Group Therapy for Durst After Dark.

Saturday (1 PM - 4 PM): Settle in among the gardens with the upbeat acoustic rock of Retrofitz.

Sunday (1 PM - 4 PM): Wrap up your weekend with the easy, lingering harmonies of the Dave Massey & Matt Hopper Duo.
